A Brooklyn Chef Lost His Pop-Up. Then His Business Took Off

When Christopher Martin lost the space for his Brooklyn pop-up, it looked like the end of the road. The lease fell through, bookings were canceled, and he was left with a pile of equipment and no counter to cook behind. For most chefs, that would be the moment to scramble for any available gig. Martin did the opposite. He stopped chasing and started building.

The setback forced him to rethink everything. Instead of hunting for another temporary spot, he turned his attention to what he could control: his recipes, his sourcing, and his small team. He began offering private dinners in people's homes, then moved to a tiny weekend residency in a friend's coffee shop. Word spread slowly at first, then picked up fast. Within three months, he had a waiting list for a six-seat tasting menu served out of a rented garage.

What surprised him most was the freedom. Without the pressure of a fixed location, he could experiment with dishes he never would have tried in a traditional setup. A fermented pepper sauce he'd been tinkering with for years became his signature. Local farmers started reaching out to him directly, offering odd cuts and unusual greens that bigger restaurants ignored.

Now Martin is in talks to open a permanent spot, but he says he will keep the pop-up model alive on the side. Losing the original space, he admits, was the best thing that could have happened. It stripped away the noise and forced him to cook with intention. His advice to other chefs in the same bind is simple: do not treat a closed door as a dead end. Treat it as a chance to redraw the map.
